Madame Coucou
Madame Coucou is a sour ale with Témiscamingue fruits, which deserves to be enjoyed while listening to something other than the famous show Passe-Partout (ha! ha!).
First fermented with ten strains of lactic acid bacteria providing a fruity acidity, this beer is then pitched with Belgian yeast as well as Brettanomyces.
During this fermentation, blackcurrants and elderberries from the Verger des Tourterelles (Duhamel-Ouest) were added to the brew.
Furthermore, aged hops were incorporated.
After spending a year in red wine barrels, the result is a tart, very fruity nectar with a beautiful rosy hue.
