Entaille

A sparkling brut cider made from a blend of wild apples, dessert apples, and bitter apples.

Part of the juice was aged for three months in oak barrels that previously held Acérum, adding a beautiful depth.

The cider was then bottle-aged on its lees for one year.

The barrels come from Distillerie Fove, and it was a pleasure to highlight them.
