Qui se soucie de regarder la fleur de carotte au temps des
Qui se soucie de regarder la fleur de carotte au temps des cerisiers ? 2025, our 2nd edition of this off-the-beaten-path beer, is this time a blend of seeded beers. These beers were seeded using yeast we harvested from Val d’Espoir honey (Saccharomyces cerevisiae), as well as from an apple (Saccharomyces bayanus and uvarum).
The beer was then aged in oak barrels for 6 months. After aging, the blend was macerated with carrots grown in our gardens and cluster cherries.
The ingredients are sourced from Quebec terroir. Who Cares… has a delicate orange hue, an earthy aroma from the carrot, and a cherry pit character. The beer is brewed from raw wheat (35%) and barley malt (65%), with only aged hops added during the boil.
It is bottle-conditioned with organic raspberry honey from Gaspésie.
Serving and storage advice:
- Ideal temperature: between 6 and 12 °C
- Serve: in a tulip glass
- Storage: upright, away from sunlight. Due to the beer’s acidity, prolonged storage could affect the metal cap
- Evolution: this beer with evolving flavors gains complexity over the years, but to fully enjoy the fruit, we recommend consuming it within 3 years of bottling
