Tisane Apaisante

Tisane Apaisante 2025, our 2nd edition, is this time a blend of spontaneously fermented beer (2022) and a seeded beer, using yeast we harvested from Val d’Espoir honey (Saccharomyces cerevisiae).

The beer was then aged in oak barrels for 3 years. After aging, the blend was macerated with linden. The ingredients are sourced from Quebec terroir.

Tisane Apaisante, with a light golden yellow color, is tangy and complex, with subtle floral and citrus notes. The beer is brewed from raw wheat (35%) and barley malt (65%), with only aged hops added during the boil.

It is bottle-conditioned with organic wildflower honey from Gaspésie.

Serving and storage advice:

- Ideal temperature: between 6 and 12 °C
- Serve: in a tulip glass and stir the lees
- Storage: upright, away from sunlight. Due to the beer’s acidity, prolonged storage could affect the metal cap
- Evolution: this beer with evolving flavors gains complexity over the years, but to fully enjoy the fruit, we recommend consuming it within 3 years of bottling
