September 2024 features all the fermentation techniques used at Brett & Sauvage. You’ll find spontaneously fermented beer from 2022, a beer inoculated with yeast isolated from an apple (Saccharomyces bayanus), then from scented chamomile (Saccharomyces cerevisiae), and even our wild apple cider from 2023. The blend was then macerated with beets, which we grew on the brewery's land, and with pear juice. The carbonation in the bottle is achieved using organic clover honey from Gaspésie. The ingredients come from the Quebec terroir. The beers are brewed with 35% raw wheat and 65% malted barley, and we use only aged hops during the boil.
This version of September is different from the first glance, marked by its vibrant red color. The beet had plenty of color to give this year! You can taste the rustic side of the cider, the earthy notes of the beet, and the sweetness of the pear, creating a delightful eclectic blend.
To fully enjoy each aroma in this beer, we recommend serving it in a coupe. The ideal storage and serving temperature is between 6 and 12 degrees Celsius.
This evolving beer gains complexity with age. To enjoy the fruit at its best, we recommend consuming it within three years of bottling. Unfiltered, unpasteurized.
*For storage, keep the bottles out of direct sunlight and upright, as acidic beers may affect the metal cap over time.
