The Art-des-Foudres series features wheat saisons refermented in a foudre — a very large barrel.
This batch matured for 14 months, allowing a mixed fermentation led by lactic bacteria and Brettanomyces yeast to develop a rustic, dry, and complex profile.
In this version, a generous amount of wild blueberries was added at the end of fermentation, bringing a vibrant, slightly tart fruitiness that harmonizes beautifully with the woody base and dryness.
On the palate, moderate, refreshing acidity balances with a fine, almost tannic bitterness that stretches into the finish.
The nose reveals aromas of dry hay, stone fruits, and barrel-aged cellar notes, now enriched with deep ripe blueberry scents and a subtle vinous note from aging.
