L’Art-des-Foudres is a series of wheat Saisons refermented in foudre, a very large oak barrel.
This batch matured for 14 months, allowing a mixed fermentation led by lactic bacteria and Brettanomyces yeast to develop a rustic, dry, and complex profile.
On the palate, a moderate, refreshing acidity balances with a delicate, almost tannic bitterness, extending the finish.
On the nose, the full Brett signature emerges: dry hay, woody cellar, stone fruits, all enhanced by a subtle vinous touch from barrel aging.
