Today we present a Belgian-inspired mixed fermentation beer. Dans les Abies is a blend of dark beers aged in oak barrels and macerated with hand-picked spruce tips.
It stands out with notes of plum and red berries, along with a gentle acidity. The addition of spruce tips brings a beautiful forest-like, resinous complexity that pairs perfectly with the wild yeast character.
Dans les Abies was delicately bottle-conditioned for 14 months, giving it fine bubbles and a breathtaking balance of flavors.
