From the abundance of our orchards speckled with blossoms, from multiplicity, countryside, and fields.
A liquefaction of our terroir, weakened but honest.
An experience in hybridity: Apple, crabapple, wine, piquette, flowers… all fermented together with plenty of natural yeasts. Disorienting, as floral as it is rustic.
The purity of marigold supports the drink, which also presents a rustic funk and spices. We blended it all and bottled it with natural carbonation.
Sparkling cider made from Empire apples from Saint-Paul-d'Abbotsford, Sainte-Croix grapes from Lanoraie, Vidal grapes from Saint-Louis, and marigolds from Oka.
Pétillant Naturel. 1/3 Empire Apple in carbonic maceration.
1/3 Empire Apple and Crabapples macerated in red wine from Sainte-Croix.
1/3 Vidal Piquette infused with marigold flowers.
Co-fermented naturally.
20 ppm of sulfites added at pressing. Lightly filtered.
Bottled on January 7, 2022.
Disgorged in early April 2022.
Apples pressed on December 15, 2021; Sainte-Croix harvested on September 29, 2021.
