Débuts.
Single-celled yeast.
The very start of the transformation from juice to wine.
Here, Distance, our Riesling, borrows its yeast soul from Beginnings.
A cider, yes, but in a vini mode.
Disguised.
A cider with a Riesling soul: mineral, fresh, herbal, and very dry.
After being emptied, an ovoid tank containing Riesling – Distance 2021 – was filled with apple juice, preserving the lees and the microbial and yeasty ambiance that the wine fermentation had released.
After two days, fermentation was already distinct: the primary fruitiness of the apple gave way to minerality and the herbs and lemon of the Riesling. Linear, fresh, precise.
At the same time, we had a tank of Riesling piquette that fermented up to 4% alcohol, reminiscent of iced lemon tea.
We blended it all and bottled it with natural carbonation.
Flavored sparkling cider.
Pétillant Naturel.
2/3 Empire cider fermented on Riesling lees, 1/3 Riesling piquette.
Natural fermentation. 20 ppm of sulfites added at pressing.
Bottled on January 14, 2022.
Disgorged in early April 2022.
Empire Apples, Riesling piquette.
Empire Apples from Coteau Saint-Paul (Saint-Paul d’Abbotsford).
