Fleur d'Alice

Lemon, lime, and rose petal white beer.

The story behind this beer comes from a quote from my daughter who, at a St. Jean Baptiste Day celebration in 2014, asked me for a tattoo of a flower on her face named Alice.

I immediately loved the play on words and wanted to create a beer recipe with it.

The first version included the fleur-de-lis.

Not seeing much of a taste result, I tried this second version with a different flower, rose petals.

It changes the wordplay, but it's all about good beer.

The combination of ingredients in this second version is very successful! The flower remains very subtle, which was the goal!

A good white beer with various inspirations from Quebec (Quebec malts), Belgium (coriander, lime, and lemon), and Germany (German yeast and hops).
