This dry-fermented apple cider is then aged in Hungarian oak barrels for 5 years. Its secret: the barrels previously held apple mistelle 5 years earlier.
The sugars and flavors from the mistelle, trapped in the oak, re-fermented our cider up to 13% over 5 years.
The final product is then blended with freshly fermented cider to balance it and restore a touch of freshness.
