Today, we’re excited to introduce a brand-new series: Demo Tape, a lineup of experimental collaborative NEIPAs where our production team and guest brewers test new concepts, explore the latest trends, and push experimentation even further.

We’re kicking off this first edition alongside none other than our friends and neighbours at Brasserie Bas-Canada! The goal of this demo beer was to evaluate the impact of thiols on beer. Thiols are powerful compounds known for enhancing juicy aromas and flavours.

To achieve this, we used three different approaches. First, mash hopping, a technique that involves adding hops during the mash to extract a greater amount of thiol precursors.

Next, we used Mega Motueka for the mash hop addition — a hop product enriched with Phantasm, an ingredient derived from Sauvignon Blanc grapes and known for its high concentration of thiol precursors.

Finally, we employed a thiolized yeast, capable of converting these precursors into active thiols, further enhancing the beer’s juicy profile.

Brewery Notes: The aroma is intensely fruity, bursting with ripe tropical fruit and citrus notes. The body is silky and exceptionally smooth.

On the palate, expect an initial wave of passion fruit, followed by lime zest and grapefruit, finishing with delicate strawberry notes. The finish remains soft, supported by subtle resinous hop character.
