Chaton Doux Piquant

Made from lean Quebec pork* to which ventrêche is added, the spicy sweet chaton is a sausage with more fat than the sticks. The addition of ventrêche to the mix gives it delicate smoky notes that are perfectly revealed by the cayenne pepper. There are also notes of dried black olives.
