La Clairière V3
Clairière V3 is a blend of spontaneously fermented beer from 2021 and beer inoculated with Saccharomyces cerevisiae yeast that we harvested from Val d’Espoir honey. The blend was then macerated with Gaspesian aronia and mint sourced from the aquaculture program at the fishery school in Grande-Rivière. The ingredients come from the Quebec terroir. The beers are brewed with 35% raw wheat and 65% malted barley, and we use only aged hops during the boil.
This beer, with its intense red hue, presents a pronounced fruitiness from the very first sip, followed by gentle menthol aromas that are not overly extravagant! A bold blend, you might say? One quickly understands the uniqueness of its flavors. To fully enjoy each of the aromas in this beer, we recommend mixing the sediment with the rest of the beer (we wouldn’t want to lose a single part of its aromas) and serving it in a coupe. Clairière V3 showcases maximum fruitiness when enjoyed young. While aging allows the beer to mature, it comes at the expense of the fruit character. To enjoy the fruit at its best, we recommend consuming it within three years of bottling.
Ideal storage and serving temperature is between 6 and 12 degrees Celsius. This evolving beer gains complexity with age. Unfiltered, unpasteurized.
*For storage, keep the bottles out of direct sunlight and upright. The acidic nature of the beer may affect the metal cap over time.
