White 2021

GRAPE VARIETIES: Acadie 44% / Frontenac Blanc 20% / Triomphe d'Alsace 20% / Vidal 16%

VINIFICATION - AGING: The alcoholic fermentation of each of these varieties takes place in stainless steel tanks for 2 to 3 weeks at a temperature of 15°C to preserve the full freshness of the aromas. Aging lasts a few months on the lees with stirring (bâtonnage).

TASTING AND STORAGE: The Cantina blanc opens with a delicate nose of citrus and white flower aromas. The well-balanced palate combines generosity and complexity. Notes of grapefruit and acacia flower support the finish. Serve between 8°C and 10°C.

GEOGRAPHIC LOCATION: Located in the Oka Valley, in the heart of the Lower Laurentians in climate zone 5a near the Lake of Two Mountains, the vineyard extends over 30 hectares and benefits from a climate favorable to sustainable viticulture.

FOOD AND WINE PAIRINGS: Ideal as an aperitif, this wine pairs well with seafood, fish, poultry, pork, and fruity cheeses.
