GRAPE VARIETIES: Chardonnay 42% - Pinot Noir 42% - Vidal 16%

VINIFICATION - AGING: After being harvested on the Coteau du Calvaire d’Oka, the grapes are pressed at low pressure while protecting the juice from any oxidation. Alcoholic fermentation is then carried out in stainless steel tanks for 2 to 3 weeks at a temperature of 15°C. To accentuate the aromas, the lees are resuspended to provide more balance and roundness on the palate.

TASTING AND STORAGE: The Rosé du Calvaire opens with aromas of peach, apricot, and small red fruits. The palate is perfectly balanced and wins us over with its freshness and great indulgence. Serve between 8°C and 10°C.

GEOGRAPHIC LOCATION: Produced from a 30-hectare plantation located in a valley favorable to sustainable viticulture in climate zone 5a near the Lake of Two Mountains, La Cantina wines were born from the desire of a visionary winemaker to establish the cultivation of noble grape varieties in Oka and leave his distinctive mark there.

FOOD AND WINE PAIRINGS: This gastronomic and delicate rosé is wonderful enjoyed as an aperitif or as an accompaniment to seafood, salads, and charcuterie.
