A true farmhouse beer, that's what it is.
Ingredients from our lands (and those of our neighbors), a concern for quality but also for community, a desire for proximity with others and with our terroir.
In this era of globalization, this approach is rarer. Inspired by the traditions of the Baltic countries that Martin (Les Coureurs des Boires) visited (Lithuania, Latvia, Estonia), where true brewing cultures have existed for centuries on hundreds of farms, this beer is an exploration of the same concept, but applied to the lands of Shefford.
This is therefore not a beer style. It's a way of seeing the world of beer and, in this case, of nodding to the flavors common to the Baltic countries.
Rye, grown in the fields of Brasserie La Ferme, ?????????????? ???? ?????? ????????, like in Baltic farmhouses. Honey, produced by the bees of Shefford. Delicate local caraway, to reference the black rye bread so dear to the people of these countries. A long cold conditioning to refine it all.
This beer is therefore not a Tamsus, a Tumšais or a Koduõlu, just as it's not a pumpernickel bread. But at the same time, it's a bit of all that.
