VINIFICATION - AGING: A cold pre-fermentation maceration is carried out for 2 to 3 days, followed by traditional vinification. Each grape variety is vinified separately in stainless steel tanks before being blended and then bottled.
TASTING AND STORAGE: The Cantina Rouge reveals a fresh and luscious nose with delicate notes of black fruits and spices. The palate is well-balanced and supported by woody notes and supple tannins. Best enjoyed young. Serve between 15°C and 17°C.
GEOGRAPHIC LOCATION: Located in the Oka Valley, in the heart of the Lower Laurentians in climate zone 5a near the Lake of Two Mountains, the vineyard extends over more than 30 hectares and benefits from a climate favorable to sustainable viticulture.
