Débroussaille

The name comes from the fact that the creation of this beer clarified our path to brewing good beers through several long days, sipping good brews, and scratching our heads to craft a redhead that represents us... Oh yes, and purely by chance, there's also the word "rouss" in the name.

We continued the tradition of enjoying some fine nectar while brewing and tasting (among other things) the Lilac Saison, while the fantastic crew at À la Dérive showed us how to transform a 20L batch recipe into a 1200L batch and nailed the sugar content.

A gourmet redhead, with a rather round and silky texture.

You can discern several prevalent caramel nuances enveloped in rye notes, balanced by hints of toasted/roasted bread, almonds, hazelnuts, and more discreet floral notes.

The finish is relatively long with rye, featuring a slight bitterness mainly on the roasted side but also slightly herbal.
