Assemblage Blanc
Assemblage Blanc for our wine-lovers.
It's a blend of cask-fermented lagers on white grape marc with a seasonal slice of goldenrod flower honey and buckwheat, originally brewed for our friends at Maltéhops.
It's sweet, vinous and honeyed.
Its small bubbles give it a "pet nat"-style effervescence, and the whole thing stretches slightly on a roundness of saison yeast with a very dry finish, just the way we like it!
