Pas Pire Zen

This typically veiled and very pale German beer is characterized by banana and clove aromas which are aromas derived from the fermentation process.

Indeed, the character of the weizen comes mainly from the strain of yeast used.

The banana aroma is an ester (isoamyl acetate) and the clove aroma comes from a phenol (4-vinyl-guaiacol) which is produced by the transformation of ferulic acid present in the wheat by the yeast.
