Blend of barrel-aged beers.
This mixed-fermentation beer is composed of Perdu Dans Malle (51%), PS Tendresse (24%), Ein Masse (12.5%), and Bière De Chai 3 (12.5%), aged from 6 to 27 months in barrels inoculated with wild yeasts and acidifying bacteria.
The blend was subsequently conditioned for several weeks with mango puree, then bottle-conditioned.
The mango is subtle but easily recognizable.
Sharp acidity accompanied by woody notes.
