Belgian Triple.
In order to bring a particular signature to our Triple, we chose to use yeasts from two Trappist breweries (Chimay and Westmalle) to create our interpretation of the style.
On the nose, the yeast esters (fruity and spicy) are completely dominant, with a slight malt sweetness.
The body of the beer is rather round and highly carbonated.
On the taste, the citrus fruits brought by the yeast esters are particularly expressed, then we notice some bubblegum and finally a little bit of cloves.
The final bitterness is light and balances nicely with the impression of residual sugar.
