EMPYRUS cider, born of the alliance between the Empire apple from Coteau St-Paul and the Beauté Flammande Pyrus communis pear, offers the best of these two fruits grown on the southern slopes of Mont Yamaska.
To obtain this fine nectar, the pears from the Gibb farm are used in two stages. First, they are pressed and the must is concentrated by cooling.
Separately, the pear pomace is blended with the apple must for the duration of fermentation.
Once maceration is complete, the pear must is added to enhance the aromatic freshness of the golden fruit.
