Kombu
KOMBU - Baltic Porter aged in Gin barrels from Distillerie du St. Laurent
This is the first time we've tried aging a dark beer in gin barrels, and the result exceeds our expectations!
The aromatic spectrum is completely different from other spirit barrels we've used in the past (rum, bourbon, rye whiskey...).
The nose is incredible and offers umami notes reminiscent of soy sauce and dried porcini mushrooms.
In the mouth, the gin's aromatic bouquet develops floral flavors reminiscent of Chartreuse.
The beer is extremely well-balanced, and the finish is smooth, concealing the beer's 10% alcohol.
The name "Kombu" comes from the "Kombu royal" seaweed harvested by the distillery in the St. Lawrence and added to the classic aromatics blend of the Gin.
