Quadruple matured for 6 months in freshly emptied Heaven Hill bourbon barrels.
We used a set of yeast strains, including a brettanomyces, which gives a result that is deliberately drier and less round than a typical abbey beer.
The body may be slightly reminiscent of a British Old Ale, but in terms of aroma, there's no mistaking it: notes of dried fruit reminiscent of prunes, hints of brown sugar, and a gentle spirit warmth left by the bourbon that was still present in the oak of the barrels.
